Rajmah (red kidney beans), served as curry, a common Indian dish The ‘kidney bean'(Rajmah) otherwise called ‘the chili bean’ with its dark red skin is named for its visual resemblance to a kidney. Red kidney beans (rājmā in Hindi and Punjabi) are an integral part of the cuisine in northern region of India. Red kidney beans are used in New Orleans and much of southern Louisiana for the classic Monday Creole dish of red beans and rice. They are a common ingredient in chili con carne. Kidney beans are a helpful source of zinc, folate and protein. They are also very high in dietary fiber and hence a healthy source of carbohydrates for persons with insulin sensitivity or diabetes[citation needed].They also provide dietary calcium (143 mg/100 g).] The commercial production of beans is well-distributed worldwide with countries in Asia, Africa, Europe, Oceania, South and North America all among the top bean growers. Brazil and India are the largest producers of dry beans.
